Interview with Jaume Ferrás, Creative Director of The Macallan
Macallan is a Scottish single malt whisky distillery. Originally, Macallan aged its whiskies exclusively in sherry casks purchased from Jerez, Spain. Starting in 2004, Macallan introduced a new product line, the Fine Oak series, featuring whisky matured in oak barrels that had previously contained bourbon, in addition to the traditional sherry casks.
How did the idea for The Ultimate Dinner come about?
We wanted to create an unforgettable and unique experience that would bring The Macallan into the world of fine gastronomy through innovation.
How would you define The Macallan’s style?
We strive to create a product of the highest possible quality. We live for quality, and our goal is perfection. Absolute perfection and craftsmanship always come first. There’s a phrase I particularly like that defines The Macallan’s philosophy: “Quality beyond reason.”
What is your favorite pairing with The Macallan?
I enjoy pairing The Macallan with tapas and a relaxed conversation among friends.
Do you consider gastronomy an art form?
I believe gastronomy is more than art. Beyond knowledge, understanding ingredients, and the search for new experiences, there is a vital element of passion. Without passion, one cannot dedicate their life to pushing the limits of human experience for the pleasure of a guest sitting at the table.
Name three Spanish luxury gastronomic brands.
Cava, El Celler de Can Roca, and Jerez.
The Macallan offers a dinner at El Celler de Can Roca valued at €8,500. What does luxury mean to you?
Luxury is having an experience that is inimitable to you. Luxury can be sharing a vacation with your family, enjoying a quiet dinner with your partner, or returning to a place from your childhood. Luxury isn’t about the price you pay for something, but about living a moment that is unique and meaningful to you.

The chain I was given when I was born.
Where do you like to escape to disconnect?
It’s not about where I go, but who I’m with. I like being surrounded by people I love. Wherever they are, that’s where I can truly disconnect.
Your favorite book or movie:
Moulin Rouge.
Although The Macallan is a global brand, does it have a special connection to any particular country?
It has a very special bond with Spain. Specifically, Jerez is one of the places from which we source the oak casks used to mature The Macallan whisky. These casks impart the signature aromas and flavors of dried fruits, spices, chocolate, and orange.
That said, I believe The Macallan has a connection wherever there is a consumer who truly appreciates the brand.
How do you like to spend your free time?
I enjoy spending time with family and friends, and going to the cinema.
